Lisa, first of all, I believe a lot of Jewish Iranians still living in Iran periodically visit Israel via Turkey and then go back again to Iran. And secondly, visitors to Israel can always ask that their passport not be stamped. This is quite acceptable and common, and I understand that the authorities respect the request.
